Banana Blossom Chips is a healthy snack rich in dietary fiber, antioxidants, and plant-based protein. It is a result of combining local Thai ingredients: banana blossoms, which are high in dietary fiber and antioxidants, chickpea flour, a source of plant-based protein, and red jasmine brown rice, which has a low GI value and high antioxidants. It is processed to create crispiness and a unique shape, reduces fat, is gluten-free, and helps maintain nutritional value. Therefore, it is a new alternative for health-conscious consumers and adds value to Thai agricultural products.

The Ginbanirose project aims to develop herbal extracts for alleviating menstrual pain using key ingredients: roselle, banana inflorescence, and ginger. These ingredients contain bioactive compounds with anti-inflammatory, antioxidant, and pain-relieving properties. The extracts are enhanced through liposome encapsulation technology, which improves absorption and stability. The production process involves herbal extraction, freeze-drying, and liposome formulation using lecithin and stabilizers. Experimental results demonstrate high phenolic content and antioxidant activity via the DPPH method. Ginbanirose addresses women’s quality of life concerns while offering significant business opportunities in the rapidly growing herbal market, particularly in the Asia-Pacific region.

This research studies the effect of CBD on the excitability of mice nociceptive trigeminal ganglion neurons. The electrophysiological parameters of the mouse trigeminal ganglion cells are measured using a Whole Cell Current Clamp Model on a primary cell culture treated with 0.5 uM CBD for 24 hours compared to a control group. After obtaining the results statistical analysis is done using a Mann Whitney-U test.

The activities of the project's operations consist of: checking microbe on sample food, hygienic condition of cooker, containers and materials, sanitation knowledge and private sanitation and food quality of canteen and cleaning of cooker. The Food Safety Management program collaborated with the Property Management office, planned the operations, and assessed food vendors based on the SAN 20 food safety standards requirements. Using A.13 testing kits, we conducted testing for coliform bacteria contamination in food, containers, equipment, and hand contact surfaces, collecting 6 samples. These included samples such as prepared food, areas in front of the store, and food handlers' hands. Additionally, we used A.11 testing kits to test for coliform bacteria contamination in water and ice. The analysis of results, including physical, microbiological, and chemical aspects, serve as a guideline for improving the quality and safety of food production and service in the institution's canteen.

This study explores the application of deep convolutional neural networks (CNNs) for accurate pill identification, addressing the limitations of traditional human-based methods. Using a dataset of 1,250 images across 10 household remedy drugs, various CNN architectures, including YOLO models, were tested under different conditions. Results showed that natural lighting was optimal for imprinted pills, while a lightbox improved detection for plain pills. The YOLOv5-tiny model demonstrated the best detection accuracy, and efficientNet_b0 achieved the highest classification performance. While the model showed strong results, its generalization is limited by sample size and drug variability. Nonetheless, this approach holds promise for enhancing medication safety and reducing errors in outpatient care.
