THE BRAIN ACTIVATION ON UPPER EXTREMITY MOTOR CONTROL TASKS IN DIFFERENT FORCES LEVELS

Motor control is a critical process for muscle contraction, which is initiated by nerve impulses governed by the motor cortex. This process is vital for performing activities of daily living (ADLs). Consequently, a disruption in communication between the brain and muscles, as seen in various chronic conditions and diseases, can impair bodily movement and ADLs. Evaluating the interaction between brain function and motor control is significant for the diagnosis and treatment of motor control disorders; moreover, it can contribute to the development of brain-computer interfaces (BCIs). The purpose of this study is to investigate brain activation in designed upper extremity motor control tasks in regulating the pushing force in different brain regions; and develop investigation methods to assess motor control tasks and brain activation using a robotic arm to guide upper extremity force and motor control. Eighteen healthy young adults were asked to perform upper extremity motor control tasks and recorded the hemodynamic signals. Functional Near-Infrared Spectroscopy (fNIRs) and robotic arms were used to assess brain activation and the regulation of pushing force and extremity motor control. Two types of motion, static and dynamic, move along a designated trajectory in both forward and backward directions, and three different force levels selected from a range of ADLs, including 4, 12, and 20 N, were used as force-regulating upper extremity motor control tasks. The hemodynamic responses were measured in specific regions of interest, namely the primary motor cortex (M1), premotor cortex (PMC), supplementary motor area (SMA), and prefrontal cortex (PFC). Utilizing a two-way repeated measures ANOVA with Bonferroni correction (p < 0.00625) across all regions, we observed no significant interaction effect between force levels and movement types on oxygenated hemoglobin (HbO) levels. However, in both contralateral (c) and ipsilateral (i) PFC, movement type—static versus dynamic—significantly affected brain activation. Additionally, cM1, iPFC, and PMC showed a significant effect of force level on brain activation.

Rice Flour/Starch Modification for Health and Sustainable Food Industry: Ultilization of Starch-Polyphenols Complex Mechanism

Most rice is consumed as cooked, milled rice, but a small portion is also ground into flour or separated into a starch fraction and used by the food industry as a gluten-free ingredient. This study aims to find out if different types of rice flour and starch, such as white and colored rice, could be used in industry. This study employs green modification techniques to slow down the digestion process by combining polyphenols with starch. Our initial study found that the raw colored rice has a lower glycemic index than other types of rice, such as brown or white rice. Another study that looked at how the quality of colored rice flour was changed by different methods also discovered that out of the six green methods (annealing, heat moisture treatment, ultrasound, pregelatinization, wet-microwave, and dry-microwave). It found that ultrasound improved the polyphenol bioaccessibility in the rice flour and reduced the digestion rate. The pregelatinization process led to the flour having high solubility and an estimated glycemic index. Different techniques affected the flour/starch quality in different ways. Therefore, for further industrial application, it could also be easier to select the method for food product based on their required techno-functional quality of flour/starch. In addition to the modification techniques, this study showed that the high bioaccessible polyphenol content and high polyphenol content in rice greatly slowed down the rate of digestion. This study also open for further exploring the possibility of using high polyphenol agricultural waste to modify starch and flour in a sustainable manner.

Cancer is one of the major health issues in Thailand, particularly as the country enters an aging society. The risk of chronic diseases among the elderly often results in limitations in treatment, making it difficult for most patients to achieve a complete recovery. This necessitates continuous care and the provision of accurate information and guidance about cancer. However, current health record systems for patients lack effective interconnectivity, which hinders data analysis and the development of patient care models. Additionally, incorrect information about cancer spread across social media can lead to misunderstandings among elderly patients. To address these issues, researchers have developed a chatbot system that utilizes Natural Language Processing (NLP) technology to understand human language and accurately respond to questions about elderly cancer patient care. The chatbot provides reliable and up-to-date information based on medical knowledge sourced from a database reviewed by healthcare professionals. Furthermore, a web application has been developed to record and analyze patient assessments according to medical standards, enabling healthcare providers to plan and develop appropriate treatment approaches in a better way. This system also facilitates data sharing and connectivity across hospital systems, allowing information to be used to enhance the precision and modernity of treatment approaches. In addition, the chatbot acts as an assistant, providing information and guidance to patients, reducing the workload of healthcare staff in answering questions and encouraging patients to take a more active role in managing their own health.

Encapsulation of Anthocyanins in Spray-Dried W/O/W Emulsion

This study aims to investigate the encapsulation of anthocyanins in water-in-oil-in-water (W/O/W) emulsions and their spray-drying process to enhance anthocyanin stability against external factors such as light, temperature, and pH changes. The W/O/W emulsion was prepared using suitable surfactants and dried using a spray dryer at an inlet temperature of 120–140°C and an outlet temperature not lower than 80°C. The results showed that the composition ratios of water, oil, and surfactants significantly influenced the physical and chemical properties of the emulsion, as well as the encapsulation efficiency of anthocyanins. The spray-dried W/O/W emulsion demonstrated effective anthocyanin retention and improved long-term stability, making it applicable for food and health-related products.
