Tepache is a traditional Mexican fermented beverage commonly made using pineapple peels, which naturally contain sugars and the enzyme bromelain. These components contribute to its distinctive aroma and unique flavor. This project aims to develop a health-enhancing tepache by fermenting pineapple peels with probiotic yeast and lactic acid bacteria. Additionally, prebiotics, including inulin and xylo-oligosaccharides, are incorporated as nutrients to support probiotic growth. The resulting synbiotic tepache promotes gut microbiota balance, exhibits antioxidant properties, and enhances the immune system, making it a functional and beneficial beverage for consumers.

This study aims to develop a board game for teaching Integrated Farming System and to examine the learning achievement of third-year vocational certificate students at Ratchaburi College of Agriculture and Technology who used the board game as a learning tool. The research instruments included a board game developed using the Educational Boardgame Design Canvas. The board game is a strategic planning game consisting of five game boards, and 166 cards categorized into four types: 30 event cards, 60 special action cards, 16 character cards, and 60 production cards. It also includes 180 resource tokens of six kinds: 60 water tokens, 60 soil tokens, 45 plant product tokens, 45 animal product tokens, 45 aquatic product tokens, and 45 currency tokens. Additional components include one die and five player aid sheets. The game emphasizes planning and decision-making in integrated farming to maximize production and achievement points under game conditions and simulated scenarios. Research tools also included pre-and post-tests and a satisfaction questionnaire. The results indicated that students’ average scores significantly increased at the .05 level after using the board game, with the average pre-test score at 6.54 and the post-test score rising to 17.71. Additionally, an analysis of student satisfaction with board game-based learning revealed a high level of satisfaction (mean score = 4.45). The highest-rated aspects were the teacher’s implementation of post-tests (mean score = 4.69) and the engaging and diverse teaching methods used (mean score = 4.66).

Cancer remains a major global health challenge as the second-leading cause of human death worldwide. The traditional treatments for cancer beyond surgical resection include radiation and chemotherapy; however, these therapies can cause serious adverse side effects due to their high killing potency but low tumor selectivity. The FDA approved monoclonal antibodies (mAbs) that target TIGIT/PVR (T-cell immunoglobulin and ITIM domain/poliovirus receptor) which is an emerging immune checkpoint molecules has been developed; however, the clinical translation of immune checkpoint inhibitors based on antibodies is hampered due to immunogenicity, immunological-related side effects, and high costs, even though these mAbs show promising therapeutic efficacy in clinical trials. To overcome these bottlenecks, small-molecule inhibitors may offer advantages such as better oral bioavailability and tumor penetration compared to mAbs due to their smaller size. Here, we performed structure-based virtual screening of FDA-approved drug repertoires. The 100 screened candidates were further narrowed down to 10 compounds using molecular docking, with binding affinities ranging from -9.152 to -7.643 kcal/mol. These compounds were subsequently evaluated for their pharmacokinetic properties using ADMET (Absorption, Distribution, Metabolism, Excretion, and Toxicity) analysis, which demonstrated favorable drug-like characteristics. The lead compounds will be further analyzed for conformational changes and binding stability against TIGIT through molecular dynamics (MD) simulations to ensure that no significant conformational changes occur in the protein structure. Collectively, this study represents the potential of computational methods and drug repurposing as effective strategies for drug discovery, facilitating the accelerated development of novel cancer treatments.

This study aims to develop a board game on mushrooms production with cooperative learning and to examine its effects on the learning achievement of third-year vocational certificate students in the mushroom production course. The research instruments included a board game designed using the Educational Boardgame Design Canvas framework, comprising 60 cards (7 main cards, 24 secondary cards, and 29 additional cards). The board game was implemented alongside the Learning Together (LT) cooperative learning approach, following the ASSURE Model for instructional media design. Pre- and post-tests, along with a satisfaction questionnaire, were used to assess student performance and engagement. The findings revealed a statistically significant improvement at the .05 level in students' learning achievement before and after using the board game. At Ratchaburi College of Agriculture and Technology, the post-test mean score was 16.00, compared to a pre-test mean score of 12.50. Student satisfaction with the learning approach was at the highest level, with an average satisfaction score of 4.69. To further refine and expand the study, the board game was also implemented at the Uthai Thani College of Agriculture and Technology, where similar improvements were observed. The post-test mean score increased to 11.21, compared to a pre-test mean score of 7.48, confirming the research hypothesis. Student satisfaction at Uthai Thani College of Agriculture and Technology was also high, with an average satisfaction score of 4.39. These results suggest that integrating board games with cooperative learning effectively enhances student achievement and engagement in agricultural education.

The growing interest in antioxidant-rich foods is driven by their potential to reduce the risk of chronic diseases such as cancer, cardiovascular conditions, and cellular degeneration. Ginger (Zingiber officinale), banana inflorescence (Musa paradisiaca L.), and roselle (Hibiscus sabdariffa L.) are herbal plants known for their high phenolic content, a crucial component in antioxidant activity. However, the bioactive compounds in these plants are often unstable when exposed to light, temperature, and oxygen, leading to a reduction in their efficacy. This study aims to investigate the optimal ratio of ginger, banana inflorescence, and roselle for encapsulation in liposomes—a technique designed to enhance the stability of bioactive compounds and improve their delivery efficacy. The research evaluates the antioxidant activity of the extracts using DPPH, ABTS, and FRAP methods, alongside total phenolic content (TPC) measurement. The most effective ratio for antioxidant activity will be selected for liposomal encapsulation, employing phospholipids as key structural components. The encapsulation efficiency (EE%) will be calculated to assess the effectiveness of the liposomal delivery system. The findings are expected to identify the optimal combination of ginger, banana inflorescence, and roselle that maximizes antioxidant potency and enhances the stability of bioactive compounds through liposomal encapsulation. This approach offers a promising strategy for developing herbal health supplements that maintain their biological properties over time.

Metallic nanoparticles embedded in cellulose nanocrystal (MNPs/CNC) films were prepared by solution casting for antimicrobial and fungus in edible peel fruit. MNPs/CNC was synthesized by ultrasonic waves. The as-synthesized was characterized by the chemical characteristics by the transmission electron microscope (TEM), X-ray photoelectron spectroscopy (XPS), X-ray diffraction analysis (XRD), Fourier transform infrared spectrometer (FT-IR), zeta potential analyzer, and UV-visible spectrophotometer. MNPs/CNC films had high potential in antimicrobial and fungus. Therefore, MNPs/CNC can be used to wrap edible peeled fruit to inhibit the growth of microorganisms, which can effectively extend the shelf life of fruits.

In this project, we introduce Power Grid Analyzer (PGAz), an open-source software package based on MATLAB, specifically designed for analyzing and controlling future power grids. Initially, PGAz is equipped with four fundamental features: power flow (PF), optimal power flow (OPF), small-signal stability analysis (SSSA), and time-domain simulation (TS). At this stage, Part I concentrates on the development of PF and OPF. The formats of our developed tool are presented, along with its command prompts. In this part, we have developed several conventional yet effective methods in the PGAz package to address PF and OPF problems, including techniques such as the Newton-Raphson method, Gauss-Seidel method, Interior Point Method, Iwamoto’s method, Fast Decoupled Load Flow, Genetic Algorithm, and Particle Swarm Optimization. Additionally, it emphasizes important aspects, algorithms, and various case studies that have been tested against IEEE benchmarks ranging from the IEEE 5-bus to the IEEE 300-bus test systems. The results demonstrate the capabilities of PGAz for future educational and research applications in PF and OPF. Finally, we outline a plan for developing Part II, which will mainly focus on SSSA and TS.

Photocatalytic materials decorated with bi-metallic nanoparticles (Bi-Metallic NPs/ photocatalyst) was synthesized for the degradation of aflatoxin B1. Bi-metallic NPs/ photocatalyst were synthesized by ultrasonic irradiation. The as-synthesized was characterized the chemical characteristics by the transmission electron microscope (TEM), X-ray photoelectron spectroscopy (XPS), X-ray diffraction analysis (XRD), Fourier transform infrared spectrometer (FT-IR), zeta potential analyzer, and UV-visible spectrophotometer. Bi-metallic NPs/photocatalyst was used to evaluate the degradation efficiency of AFB1 in household wastewater under visible light. The degradation process was analyzed using high-performance liquid chromatography (HPLC) at a wavelength of 365 nm, revealing that AFB1 was completely degraded 100% within 2 minutes. This superior performance is attributed to its highly porous structure, increased specific surface area, and reduced electron-hole recombination rate, which demonstrate that the developed nanomaterial has successfully achieved AFB1 degradation.

Our project seek to create an Al-powered tarot card reader that bridges the gap between traditional fortune-telling and modern technology. By leveraging a combination of 3D modeling, natural language processing, text-to-speech (TTS), and speech-to-text (STT) systems, the service will deliver an interactive and culturally sensitive experience in Thai and English. Users will input their queries through voice, which will be processed via STT, and receive engaging Al-generated tarot readings through TTS. Additionally, a 3D animated avatar will mimic a real-life fortune teller, adding a visual dimension to the experience. Hosted on a user-friendly website, this platform will redefine fortune-telling by blending tradition with innovation, making it both accessible and engaging for modern users.
